GRITS CASSEROLE |

1/2 tsp. salt Brown sausage until crumbly and drain. Stir grits into boiling water with salt. Stir frequently and add more water if too stiff. Add butter, milk and cheese. Mix well. Add beaten eggs slowly stirring constantly. Add sausage. Pour into greased casserole dish. Bake at 350 degrees for 30 minutes or until firm. Serves 8-10. |

PISTACHIO COOL WHIP SALAD
1 (3 oz.) pkg. instant pistachio pudding
1 (9 oz.) container Cool Whip whipped topping
1 (16 oz.) can crushed pineapple, do not drain
1/2 c. miniature marshmallows
1/2 c. chopped pecans
½ c maraschino cherries
Small can mandarin oranges
Optional: cottage cheese, cous cous pasta, or other similar filler
With spatula, lightly mix Cool Whip and dry pistachio pudding together. Add remaining ingredients. Must be chilled overnight.
